...Bread & Butter Pudding

If you've ever wondered what to do with stale left over bread, here's a recipe that is easy to make and will satisfy your carb craving!




Ingredients

- Stale bread, preferably white, sliced (we used sourdough)
- 250 ml cream
- 250 ml milk
- 3 tbsp vanilla extract
- 2 medium eggs
- 1/4 cup sugar
- Pinch of salt
- 4 tbsp unsalted butter
- 1/3 cup of your favorite fruit preserve (we used apricot)



Method

1. Preheat your oven to 350 degrees.

2. Spread butter and your preserves over the slices of bread and cut the slices in half. Layer the slices standing up in a loaf pan.



3. Make the custard by combining the eggs, sugar, vanilla, milk, cream and a pinch of salt.

4. Pour 3/4 of the custard over the slices of buttered bread and leave for 15 minutes to allow it to soak in. Use a fork and compact the slices of bread while soaking in the custard. 





5. Add the remainder of the custard and let sit for another 10 minutes.

6. Bake for 45 minutes to 1 hour until the pudding had puffed up and the top is a golden brown.  Serve alone or with ice cream.



The next day, you can cut the left overs into slices and pan fry with a bit of butter and it's just like it came out of the oven!
