…Maple Bacon Baked Beans

When winter is as cold as it has been the past few weeks, you really need a nice hearty dish to warm you and fill you up. This baked bean recipe uses a combination of maple and bacon to transform those bland tasting beans into a meal you'd look forward to any day of the weak. Throw in some sausage and you've got a complete meal!
Ingredients:
- 4 tins of navy or white kidney beans, rinsed
- 6 sausages
- 3 carrots diced
- 1 onion diced
- 5 cloves of garlic crushed 
- 5 strips of bacon sliced
- 1tbsp dried rosemary
- 1 can of chicken stock
- 1 can of tomato paste
- 1/3 cup of maple syrup
- 1/3 cup of molasses
- 1/4 cup of ketchup
- 3 tbsp dijon mustard
- Salt and pepper

Method:
1. In a large oven proof casserole, fry the bacon until crisp and then remove for later

2. In the same pot, fry the onions and carrots until soft then add the garlic, beans, rosemary, chicken stock, maple syrup, molasses, dijon mustard, tomato paste, ketchup and sausage


3. Bake the beans covered in a 350 degree oven for 1-1.5 hours or until the sausage is cooked through and the beans have thickened the sauce. Season with salt and pepper to taste

4. Scatter over there reserved bacon
