…Kingsland Chopped Salad

In our books, Kingsland Farmer's Market is still the best in the city. It might not be as trendy or pretty as some others, but what it lacks in aesthetics it makes up for in quality vendors, a welcoming atmosphere  and what we think are some of the best food stalls in town. Here is a recipe for an easy to make and delicious chopped salad that makes the most of the fresh ingredients we found this weekend.

Ingredients: (Serves 4)
- 1 organic rib eye steak (Hoven Farms)
- 6 small cucumbers (The Cucumber Man)
- 5 carrots 
- 6 small bell peppers (Cucumber Man)
- 2 cups cherry tomatoes (Cucumber Man)
- 4 slices of rye bread diced and toasted (Kruze Bakery)
- Citrus dressing:

  • 1/4 cup olive oil
  • juice of one lemon and one lime
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • Salt and pepper to taste
Method:
1. Combine the ingredients for the citrus dressing and set aside 
2. Toast the bread in olive oil and season with salt and pepper
3. Season the steak with salt and pepper, grill for three minutes per side for medium rare. Set aside and rest for at least 15 minutes
4. Combine the chopped veggies in a large bowl and toss with the citrus dressing
5. Slice the rested steak thinly and serve over the chopped veggies and croutons
