...Chinese Beef Noodle Soup

One of the favourite dishes my grandmother made me for lunch when I was young is this beef noodle soup recipe. Here we used soba noodles but Chinese rice noodles are more authentic. The topping is a delicious mixture of beef and pickled Chinese cabbage which gives the dish a nice sweet and sour flavour.
Ingredients: (Serves 4)
- 1/2 lb ground beef
- 1 cup Chinese pickled cabbage, finely chopped
- 1/2 an onion, finely chopped
- 2 cloves of garlic, crushed
- Chicken or beef stock
- Soba noodles or Chinese rice noodles
- 1tbsp soy sauce
- 1tbsp oyster sauce
- 1tbsp Cornstarch
- 1tbsp sesame oil
- 1/2 tbsp Sugar

Method:
1. Marinate the ground beef in the soy sauce, oyster sauce, sesame oil, cornstarch and sugar for at least an hour

2. Fry the marinated beef until brown, then add in the pickled cabbage, chopped onion and crushed garlic and cook together for 15 minutes over medium heat until the pickled cabbage is slightly soft. Season with salt to taste
3. Boil the noodles according to the package instructions
4. Heat up the chicken or beef stock and set aside

5. Serve the noodles in the chicken stock with the beef and pickled cabbage mixture over top
